      So, Marley and I made a homemade peach pie for the elders on Tuesday night.

      Here's the recipe:

      Pie filling
      6 cups sliced and quartered peaches
      1/4 stick of salted butter (softened)
      1/4 cup sifted all-purpose flour
      1 cup sugar
      1/4 tsp nutmeg
      1 dash kosher salt
      1 tsp vanilla
      1 frozen pie crust
      Juice of one lemon

      Crumble top
      1/2 stick of salted butter (cut into pats) [for crumble top]
      1/2 cup flour
      1 cup sugar

      Set oven to 350F

      For the pie filling, combine peaches, lemon juice, and sugar in a sauce pan and bring to a low boil. Once boiling, remove from heat and stir until the bubbles stop. Allow mixture to cool for 5 mins.

      During 5 mins, combine flour, sugar, and butter pats into food processor, and mix into a crumble top mix.

      Once mixture has cooled, add remaining ingredients and mix together well. Pour into 9" pie crust in pie pan. Smooth out, and then pour the crumble top over the pie.

      Bake for 25 mins, and then watch carefully for a golden brown color. Remove from oven, and allow pie to cool completely before serving.

        wuap, those look awesome. The crumble top looks like cobbler. Were your peaches fresh or from a can/jar?

          That is simply fantastic to have such a willing accomplice in the kitchen. You are lucky! Beautiful pies, beautiful assistant.

          I hope to one day teach my boys to cook and bake. I am still trying to transition their delicate palates beyond hot dogs (with ketchup only!!) and peanut butter on white bread.

            The peaches came from a can, they were put there by a man, in a factory downtown. Either that or they were some that I froze back in June.

            I don't enjoy ice cream on pie. Something about the melting coming into contact with the crust makes me dislike it. I do make an exception for pecan pie off the grill and a scoop of Blue Bunny vanilla at the Camellia Grill in New Orleans.

              Also, who has the best pecan pie recipe? Post it here!

                  All the pie in the world couldn't get me to hang out in Cedar City with a bunch of farmer formers. It could probably get me to hang out with a bunch of doctors (fake and real) though, if it weren't on a weeknight.

                    Yup...our house has been a baking frenzy all weekend. 14 out of 22 pies completed. A few people are bringing pies (Thanks, Mrs. Solon!) so we should finish at right around 30 pies.

                    Bad rural Utah grammar story! I was at my in laws yesterday and my wife's uncle and her husband were there. Last I knew, they were living in Lehi, but it turns out they had moved out to Vernal 7 years ago (oops...). We were discussing the joys of rural life and he mentioned the only things that they missed were good restaurants and shopping, to which I jokingly replied, "meh, it just makes life cheaper".

                    Picture straight-faced-stare-you-down-Harry S Truman-couple-from-Fletch reply from the wife (who hasn't cracked a smile the entire evening): "No, it don't."

                    I laughed awkwardly and she just repeated herself, more emphatically, and still staring me down: "No...it...don't".

                    I quickly changed the subject to Obama's socialism and Utah's impending secession (I sort of think that they really think this is going to happen) and all was well again.
                    At least the Big Ten went after a big-time addition in Nebraska; the Pac-10 wanted a game so badly, it added Utah

                      Pie Fest 2008

                      I made a pecan pie for Pi day. It was delicious. I implemented a nifty trick I saw on food network to provide body to the filling and avoid a runny center without overcooking the exterior. It worked out well, as the exterior was crisp and the interior was moist but firm.

                        That's a great looking pecan pie. Accolades for the pecan arrangement on the surface. A few years ago, my spouse came across a pecan pie recipe that involves chocolate for a chocolate pecan pie. Adding chocolate helped with the interior firmness and is more popular at Thanksgiving than traditional pecan pie.

                            I like chocolate pecan pie, but traditional pecan pie is in my top three favorite pies (apple and coconut cream are my other two favorites, in no particular order). The trick I used for the filling was to take a 3/4 cup of toasted pecans and pound/grind them to a fine powder. I then mixed that into the syrup mixture before pouring it into the pie crust. In addition to firming up nicely while baking, this also helped the syrup mixture be viscous enough to support the whole pecan halves resting on top. Like you say, it adds a nice aesthetic.

                              Here you go:

                              Ingredients:

                              3 eggs, beaten
                              3/4 cup light corn syrup
                              1-1/2 tablespoons molasses
                              1-1/2 tablespoon maple syrup
                              3/4 cup light brown sugar
                              3 tablespoons butter, melted

                              3/4 cup pecans, finely crushed (3/4 cup before crushing to yield approximately 1/2 cup crushed)

                              1 tsp cinnamon

                              2. Press pie crust into 9.5-inch pie pan and dock lightly with fork around sides and on bottom. Refrigerate for 15 mins.

                              3. To Make Pie Filling: In a medium bowl, mix together eggs, corn syrup, molasses, maple syrup, brown sugar, butter, salt, vanilla, cinnamon, and finely crushed pecans. Spread chopped pecans over bottom of refrigerated uncooked pie crust. Pour syrup mixture over top of pecans. Arrange pecan halves on top of pie.

                              4. Place pie in oven and drop temp to 350. Bake for 50 mins or until firm. Cool at room temp for at least 1-hr (for best results, cool overnight).

                                Donuthole I also really like pecan pie and coconut cream pie. Assuming neither of us ever change thats something we'll always share and have in common.
