    This thread is for food porn for a different breed of beast.

    I had two elk backstraps from last winter's hunt. Coated with fresh garlic, sea salt, and evoo.

    I used cherry wood with a dash of mesquite. Smoked on 225 to an internal temp of 135. A quick sear (2 minutes a side), and 15 minute rest. Here w are just prior to carving

    A perfect medium rare

    Served with homemade French fries and roasted carrots.

    OMG!! This was almost the best slice of meat I have ever eaten. A little more garlic and a little less salt, and it would have been #1. I now have even more motivation for shooting defenseless animals

    Nicely done. I love elk. I've never had anything close to what you did. That looks incredible.

      Neither have I. Even my wife came back for second helpings. I have a few more roasts in the freezer. I am going to try another cut this weekend to see if I can get the same results. If so.....i think I will never let a butcher cut me another elk steak in the future.

          Looks excellant. I've only "regular" meats in my Traegger so far. Chicken, pork, salmon, etc. I'll have to try some wild game sometime.

            Looks great JIC. Last winter, I smoked a few elk roasts from the one I shot in the fall. They were very good, but I don't remember them being as tasty as what those look like right there. Makes me want to go home and cook one up tonight.

                CJF, I'm not sure how many I have (I haven't checked the freezer for them since about January), but if I have a few extra, I'll give one to you.

                      Buying it wouldn't be an option. Now then, I can't keep track of which country you live in from one day to the next, but if you're still in Utah and you want to invite me over when you cook it, I most likely wouldn't turn that down.

                          We got 3 cows on the Gordon Creek late season depredation hunt in December.

                          And, i agree on venison. It is more likely that I will return to full activity than finding a method to make deer taste fab.

                              It's because yall aren't eating venison, yall are eating mulie meat, which is good for jerky and that's about it. Bag a whitetail sometime. Very different taste.
