Las Vegas
A few more thoughts.
The only way to see the Grand Canyon from Vegas on such a short trip is taking a sunrise or sunset helicopter ride to the Indian reservation.
If you want to see the dam from the lake side, you can get a lunch or dinner cruise on The Desert Princess. I can't vouch for the food since we only rent it out a few mornings a year for some work stuff. But the cruise takes you from the marina to the dam and back.
Maybe take in a Bishop Gorman football game to see what real professional high school football looks like.
Red Rock National Conservation Area is a great place for a Sunday morning. I think one of the most fascinating museums here is the Neon Museum which has a ton of the old neon signs.
Can't really help much with food ideas. Unless your wife has the palate of a three year old.

So, I somewhat inadvertently made a commitment to take my wife out to Las Vegas at WCC tournament time where her family could spend some time with her. I am somewhat regretting this for multiple reasons.
The last time I was in Vegas was to watch Jimmer drop 52 on New Mexico in 2011, and the time before that was probably before the turn of the century, so I am not completely up to date on the place.
I am thinking of the options below, mostly because my company has deals with them, and was hoping for some feedback from the folks who spend more time there than I do.
Mandalay Bay
Aria
Signature at MGM Grand
Mandarin (but looking like I may not be able to get a room there)
Four Seasons
Also looking for someone who wants to teach me how to play craps when my wife and in-laws are hanging out.
Any feedback is welcome! I will be perusing the Las Vegas food thread as well.
