    I think I'm going to try this on Sunday. Do most of the Costcos have pork but?

      They do out here (although pretty much anywhere does out here); however, at least here, the butts at Costco are de-boned. I prefer smoking a bone-in butt. A pork shoulder is about the only cut of meat that I prefer to NOT get at Costco.

        I don't recall seeing Boston Butt, but they always have picnic roasts minus the bone (simply labelled shoulder) at our Costco. It has nice marbling and seems to be very good quality, but you have to buy two at once. As you may know, both the butt and picnic are part of the shoulder. Both are not tough to find, so you could get just one somewhere if you wanted to.

            Very cool pics Jeff. Good to see you did it right by putting the slaw on the pork sandwich. I can't tell you how many people we have over for pulled pork that make fun of me for putting it together like that .

            I actually like Pulled Pork more than brisket (don't tell my Texas friends) so I'll post a bit in this thread. I have a recipe that I pulled off of virtualweberbullet that I modify and use and it gives a very nice flavor.

            The key though is turbinado sugar. I like my pork sweet and using normal white sugar can burn at the low smoking temps to I use turbinado which tends to resist burning and gives a nice sweet, brown flavor to the pork.

                        But what temp are doing your pulled pork where sugar burning is an issue? I have a sugar-based rub and it doesn't seem to burn until I get up to 400 degrees or so. Google says that sugar starts to burn at 350.

                          Yes, I'd also like to hear more. I use brown sugar in my rub, and have never noticed a problem, but if I can get a better result with Turbinado, I am willing to give it a shot.

                              Will you smoking mensas hurry up and figure out the ultimate butt rub. I need to pick up ingredients Saturday and have no idea where to get tobbogan sugar or whatever it is.
