    Three hours in, middle of the roast is 106. Looks like I got a good sear. Funny thing is, I have almost no drippings, but the hole from my thermometer was like a geyser of delicious looking juice. Kind of worried about no drippings though. The smell is amazing.

        The flavor was great, but a hair too medium for my taste. I think I rested too long. Everyone seemed to love it though. Crab was great, hostile-style mashed potatoes and DDD creamed corn also were really good. Also, JL horseradish has a great flavor, but a hair to mild for my taste. I want my sinuses opened when I eat horseradish. I would make it again, but just add a higher ratio or prepared horseradish.

        My pics are pretty bad, the flash made them look like leather. Can't wait for French dip sandwiches tomorrow though.

          That's the great thing about prepared horseradish. You can stir more in to adjust to taste. In about five seconds!

          Other than the crab, your menu was almost identical to ours.

            For those of you that enjoy horseradish sauce with your prime rib, this is a great recipe (I use it with my chuck roasts).

            Horseradish Sauce

            Ingredients
            2 tablespoons prepared horseradish
            1 tablespoon cider vinegar
            1 teaspoon dry mustard <-- I subsituted grey poupon
            3 tablespoons reduced-fat mayonnaise
            1/8 teaspoon ground red pepper <-- I omitted this
            1/2 cup nonfat sour cream

            Directions
            In a small bowl whisk together horseradish, vinegar, mustard, mayonnaise, ground red pepper and sour cream.

                • I'm committing beef blasphemy this afternoon, and I really hope FM Coug sees this post. My wife wanted a roast done in the crock pot today for Sunday dinner so I was looking around at recipes. I saw one that several people swore by and just so that I could post about it here, I decided to try it. Coke-marinated roast

                  I diddn't have any of the flavor packets(!) the recipe also called for so I had to improvise. I seared a 2.6-lb cross-rib roast in olive oil and garlic/salt/pepper. Then I rubbed with Spade L Ranch. I put it in the crock pot with a chopped onion and carrots. I added a cup of water with some beef bullion and then a can of Coke and put it on low. I can't wait to see how good or awfully bad it turns out to be.

                      My bro-in-law does something very similar to this, but he uses Dr. Pepper rather than Coke. It's very tasty.

                        I have had ribs boiled in Dr. Pepper and then grilled to finish. Not exactly a BBQ purists method but they were tasty.

                        • So it was interesting. The meat was actually pretty tasty. The gravy I made from the juice was.....

                          The juices were too sweet for gravy, but I gave it a try anyway. By the time I added anything I could think of to counteract the sweetness (beef bullion granules, hot sauce, a dash of liquid smoke, some au jus seasoning, etc) I wouldn't say it was great, but it was decent. It probably won't be on the regular rotation.

                          • Went to Costco yesterday to get the Prime Rib I always make for my kids on Christmas. Was on my way to the counter with the $120 of Prime when I turned around and replaced it with $70 of Choice. Not sure if I'm a bad parent or just cheap. Am I going to regret it?

                            • I went to Harmon's. They were selling dry aged prime angus for $19/lb. I left with around 5.5 pounds of it.

                              NS, choice is a good cut and Costco usually has some pretty nice ones. I think you can still be a good parent. You just don't love your kids as much as I love mine.

                              • Question: How awesome is my wife?

                                I had a really busy day at work today, not knowing when/if I'd be home. So she got on Youtube and Google, figured out how to use the Yoder, and smoked two delicious tri-tips for dinner tonight (one with Slap Yo Daddy, one with garlic and salt). I called her on my way home, and even though she just finished cleaning the kitchen, she surprised me with an amazing tri-tip sandwich on grilled french bread. And steamed broccoli on the side.

                                Answer: my wife is awesome.
