        I used to make these cookies all the time. Very tasty and very easy.

          Because I can't find it online, which means I have to type it up, and I'm not going to make the effort if nobody wants it!

            Pretty pretty please! We got these Mexican Hot Cocoa Cookies from Trader Joe's last Christmas and I've been dying for some ever since.

              Perfect Chocolate Chip Cookies:

              INGREDIENTS
              1 3/4 cups unbleached all-purpose flour (8 3/4 ounces)
              1/2 teaspoon baking soda

              3/4 cups packed dark brown sugar (5 1/4 ounces)

              TIPS

              -Use fresh, moist brown sugar instead of hardened brown sugar, which will make the cookies dry.
              -This recipe also works with light brown sugar, but the cookies will be less full-flavored.

              1. Adjust oven rack to middle position and heat oven to 375 degrees. Line 2 large (18- by 12-inch) baking sheets with parchment paper. Whisk flour and baking soda together in medium bowl; set aside.

              2. Heat 10 tablespoons butter in 10-inch skillet over medium-high heat until melted, about 2 minutes. Continue cooking, swirling pan constantly until butter is dark golden brown and has nutty aroma, 1 to 3 minutes. Remove skillet from heat and transfer browned butter to large heatproof bowl. Stir remaining 4 tablespoons butter into hot butter until completely melted.

              3. Add both sugars, salt, and vanilla to bowl with butter and whisk until fully incorporated. Add egg and yolk and whisk until mixture is smooth with no sugar lumps remaining, about 30 seconds. Let mixture stand 3 minutes, then whisk for 30 seconds. Repeat process of resting and whisking 2 more times until mixture is thick, smooth, and shiny. Using rubber spatula or wooden spoon, stir in flour mixture until just combined, about 1 minute. Stir in chocolate chips and nuts, giving dough final stir to ensure no flour pockets remain.

              4. Divide dough into 16 portions, each about 3 tablespoons (or use #24 cookie scoop). Arrange 2 inches apart on prepared baking sheets, 8 dough balls per sheet. (Smaller baking sheets can be used, but will require 3 batches.)

              5. Bake cookies 1 tray at a time until cookies are golden brown and still puffy, and edges have begun to set but centers are still soft, 10 to 14 minutes, rotating baking sheet halfway through baking. Transfer baking sheet to wire rack; cool cookies completely before serving.

                I would just like to add my testimony to those born before that these cookies are great. I confess I cheated a little and made royal icing because I didn't want to wait for butter to soften this morning, but they're still a big hit at my office today.

                I should also probably add that, if I made these cookies successfully, the recipe's pretty much fool-proof. I'm a bigger fan than ever of the Surfah's today.

                    None of them date. They hang out. They text. They sit in the same car or room and don't say a word...they text. Then, they go home and whack off to internet porn.

                    • Mexican Hot Chocolate Cookies

                      2 1/4 cups all purpose flour
                      1/2 cup unsweetened cocoa powder
                      2 teaspoons cream of tartar
                      1 teaspoon baking soda
                      1/2 teaspoon coarse salt
                      1 cup (2 sticks) unsalted butter room temp
                      1 3/4 cups sugar
                      2 large eggs
                      2 teaspoons cinnamon
                      1/2 teaspoon chili powder

                      1. Preheat oven to 400 degrees, with racks in upper and lower thirds. In a medium bowl, sift together flour, cocoa powder, cream of tartar, baking soda, and salt. In a large bowl, beat butter and 1 1/2 cups sugar on medium speed until light and fluffy, about two minutes. Scrape down side of bowl. Add eggs and beat to combine. With mixer on low, gradually add flour mixture and beat until combined.

                      2. In a small bowl, combine 1/4 cup sugar, cinnamon, and chili powder. Using heaping tablespoons, form balls of dough and roll in cinnamon-sugar mixture. Place, about 3 inches apart, on two parchment-lined baking sheets. Bake until cookies are set in center and begin to crack, about 10 minutes, rotating sheets halfway through. Let cookies cool on sheets on wire racks for 5 minutes, then transfer cookies to racks to cool completely.

                      These are the kind of super crunchy cookies that don't get soggy when dipped in milk. Yum.

                        • This past weekend was the ward Priesthood Bake-Off. Despite last year's disappointing loss to carrot cake -- seriously, people, carrot cake is just a vehicle for the icing, nothing more -- I decided to try my hand at giving the judges something more in line with what they liked:




                          I made brownies from scratch, first try. We only had half the number of entries as last year, in protest to the carrot cake winning. Of the five entries, the one non-chocolate dessert won. It was a white cake with some kind of strawberry jelly on top and it wasn't that good. Next year, I'm going with a tomato covered in honey as my entry.

                          And by the way, the brownies were made from honey, cocoa, sugar and... black beans and avocado. They were pretty moist and you couldn't pick out the bean flavor (for the most part). It was still better than dry white cake with jelly on it.

                          (I know, not cookies, but I had to put it somewhere. Btw, Mrs. PAC (and thus, Mrs. pH also) has the best chocolate chip cookie recipe, but it doesn't leave the family. Drop by sometime -- there's always plenty on hand.)

                            While burning off some calories the other day, I estimated that I've probably eaten more than 7,000 of those things (cookies, not recipes) over the years, thus leading to 35+ years of unspeakable connubial bliss.

                              Awesome.

                              My mother has a cinnamon roll recipe that does not leave the family as well. It was her mother's recipe and these things are the best cinnamon rolls you will ever have. Everyone loves them and asks for the recipe and my mom has hurt more than one sister's feelings over it. Once you become part of the family you take the blood oath and receive the recipe. If someone ever gave it out I am sure it'd be the cause of my mother's death, no hyperbole.

                              I am getting hungry and sick all at once thinking about how many I have eaten in my life.

                                No joke. I live for those rolls. My wife has the taste down but is still working on the presentation. Marrying into the "Surfah Clan" has had its perks.
