    I'm glad everyone enjoyes it. When ever the middle daughter comes home from school, one of her requests is potato soup for supper.

    One variation - if you are making it vegitarian - vegitable stock works well instead of chicken stock, omit the ham and use butter/olive oil instead of the bacon fat

      Noodle soup help

      Hello all,

      As we are getting into the fall/winter months it will shortly be soup time again. Really one of my favorite meals and favorite times of the year.

      I am going to make a bunch of different homemade soups this year, which isn't normal.

      I have attempted Chicken Noodle Soups in the past and while the soup tastes good, I always have a problem with the noodles.

      The noodles overcook, soak up too much broth, and they simply fall apart. This is okay if you eat it right away, but it kills it for leftovers.

      I know we have some fantastic cooks on here and I know someone has the answers for me.

        You need better noodles and make sure you don't overcook. I use big fat egg noodles made from some little Amish clan in Indiana. Even though I get them at Kroger, I doubt those are available in CA. See if you have any specialty stores that sell different types of noodles and then experiment.

          One thing I do with noodle soups is cook the soup and noodles seperately. Just before serving I'll combine just enough soup and noodle for that meal.

          I hate mushy noodles. That is probably why I can't stand canned noodle soups.

            YOhio is correct about the noodles. Thicker noodles cooked al dente is the way to go. And if you're not sure what al dente is, the best definition I can come up with is "chewy" - not too soft, but not crunchy.

                Boil the noodles separately, as this gives you more control over how long and fast they cook. Then add them to the soup just before serving.

                    That makes perfect sense folks. I am an idiot.

                    Wait until the soup cools, then add the leftover noodles into the soup before I put it away. That is how you have successful soup leftovers.

                    Never thought it through before.

                    Once again...CUF to the rescue.

                    Now...share the recipes folks. I really like soups. I do not like Butternut Squash...so stay away from that one.

                      Personally, I would store the noodles and soup seperately and before reheating add the noodles to the soup or better yet boil up a batch of fresh noodles.

                      Are you looking for just noodle soup recipes or will any soup do?

                        another benefit of boiling your noodles separately...the broth isn't as starchy. yuck, especially when you go to reheat.
                        Fitter. Happier. More Productive.
