Christmas in New Mexico
Love Christmas in New Mexico; love the Christmas food here. So far this week, I have had excellent posole (pork and hominy stew with red chile), tamales (pork with red chile, chicken with green chile, and vegetarian with green chile), blue corn enchiladas with Christmas (red and green chile), chile con queso, and biscochitos (anise sugar cookies). Nothing better to get me in the Christmas spirit.Two things are infinite: the universe and human stupidity; and I'm not sure about the universe.

I was just snacking on some tasty treats....frankly, they have Mo written figuratively all over them, but dang if they are NOT addictive.
Sounds pretty simple...
1. 1 small square-shaped snack pretzel
2. 1 individual rolo (the kind you can roll to your pal)
3. 1 pecan
Place the rolo on top of the pretzel. Repeat this with individual pretzels and rolos....fill an entire cookie sheet.
Place the sheet in an oven for a minute or so....just long enough to soften up the rolo, but not melt them.
Remove sheet from oven, quickly place one pecan on top of each rolo. You wind up smashing the rolo down a bit onto the pretzel.
Let cool for a little bit.
Eat about 20 of them in one sitting.Fitter. Happier. More Productive.
