For a novice, how tough a task should this be? I'm getting the same model so everything should fit the same. Electric is already in. Am I missing anything?

Not hard at all.
How to install a garbage disposal.
Just be careful. They are heavy and can do some serious damage if it falls on you.
My dad was installing a garbage disposal and thought he got the disposal locked in under the sink. He didn't, and it fell hitting him in the forehead. He got a good bump, but thought nothing of it. A few days later he started losing his vision. Local doctors couldn't figure it out and he was sent to the UCLA medical center. They got the vision loss stopped, but he can only see from the waist up. True story:
It took me 5 hours to replace the disposal and I still did it wrong. The motor of the new disposal got fried before the circuit shut off.

There is a plastic knockout that you need to remove. This is where the hose from your garbage disposal dumps into the disposal. If you don't do it before install you will have to take all of that crap apart and start over.
Guess how I know... :P

Shouldn't be a problem at all. When I've removed and replace mine I've put a small bottle jack under the disposal to hold it in place while I connected/disconnected. When I didn't have the jack I just used a bucket of the right height to wedge it in place underneath so I had both hands free. Whatever you do, spend a few extra bucks and get the super heavy duty disposal. I recommend a 3/4 HP unit. I have this one:

I don't use a disposal. We just dump our food into the drain...and then I reach in with my hand and pull everything out and dump it into the garbage can.

Not tough at all, especially if you are using the same make and model. I did mine a couple of years ago and it went just fine. It may be helpful to have an extra pair of hands once you're ready to get the new one on. They can be a pretty snug fit.
